  • 4-5 dill pickles, finely chopped
  • 3 tablespoons pickle juice (from the jar of pickles)
  • 3 tablespoons vegetable broth or water
  • 3 tablespoons vegetable oil
  • 2 tablespoons white wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. Wash the potatoes thoroughly to remove any dirt or debris. Place them in a large pot and cover with cold water. Add a pinch of salt to the water.
  2. Bring the water to a boil over medium-high heat and cook the potatoes until they are tender when pierced with a fork (about 20-25 minutes, depending on the size of the potatoes).
